These coconut cookies are packed with flavor and they are very easy to make! They are the perfect addition to your afternoon fika with coffee or tea. They are sweet, chewy, and crispy at the same time, simply delicious. You most likely have most of these ingredients at home!

The idea for making these cookies came from clearing out the kitchen cabinets. We tend to buy several different dry ingredients for cooking and baking that sometimes end up not being used. This is a great way to use up that half-empty bag of coconut flakes. If you grate some lime zest on top and decorate the cookies with coconut flakes, they look like you got them from a cafe.

Ingredients

2dl coconut flakes

75g of melted butter

1,5 dl sugar (or coconut sugar)

1 tsp of baking powder

1 egg

1dl of flour

Instructions

  1. Mix all the ingredients in a bowl.
  2. Scoop the cookies to a baking sheet (about two tsp of the mixture per cookie).
  3. Bake for about 10 minutes in 200 °C until golden brown on top.
  4. These cookies spread quite a lot in the oven so don’t worry. Cool down, serve with some coconut flakes and lime zest on top and enjoy!
