Vispipuuro as in “whipped porridge” is a classic Finnish dessert. Vispipuuro is made from semolina and lingonberries and it is usually served with milk and a sprinkle of sugar on top. You get this wonderful bitterness from the lingonberries, sweetness from the sugar and the milk brings all the flavors together. Even though it is a “porridge”, the consistency is more like a foam or a pudding and it is a fresh and light dessert. Alternatively to lingonberries you can try to make the Vispipuuro with any other red berries.

Ingredients

1 liter of water
4 dl lingonberries/any red berries
1 dl sugar
1,5 dl semolina
1/2 tsp salt

Instructions

  1. Crush the lingonberries with a fork/blender.
  2. Add water, the crushed berries, salt and sugar to a deep pan. Let boil for a few minutes.
  3. Add the semolina whisking rapidly. Let simmer under low heat for about 5 minutes stirring continuously.
  4. Let cool down completely and let set in the fridge. Whisk before serving with a hand mixer. Serve with milk/plant based milk and berries (and sugar) on top.
