Here comes a recipe for “Romsås” as in our fodmap-friendly version of the classic Swedish roe sauce. Romsås is typically eaten with fish and potatoes but it works also well with chips as a dip. Typically, roe dips have red onion but instead, we use loads of chives to make it a bit easier on the stomach. This dip/sauce is simple but still incredibly flavorful.

Ingredients

About 60-70g of roe

200g of lactose free creme fraiche

A squeeze of lemon juice

Chives (and dill for decorating)

Sea salt flakes

Freshly ground pepper

Instructions

  1. Mix creme fraiche with the roe (leave a little bit of the roe as decoration on top).
  2. Add the sea salt flakes and pepper, a squeeze of lemon juice and chopped chives.
  3. Top with the rest of the roe and more chopped chives (and dill).
  4. Let set in the fridge for a while before serving. Enjoy with chips and beer/bubbly (also goes well on toast as a starter).
