You have probably seen the viral Baked Feta Pasta with tomatoes. The recipe has been incredibly popular since it is so easy and delicious requiring minimal effort. Always love that! This is our version of the Baked Feta Pasta but Mediterranean style with some different vegetables. It is super simple to make and the flavours work so well together while the oven baked feta makes a delicious pasta sauce. You can use the vegetables of your liking (for example broccoli, zucchini, tomato, paprika, eggplant and so on). This recipe has been a lifesaver on some lazy evenings when we could not bother to spend a long time in the kitchen.
Ingredients for 2 portions
200g of feta
Zucchini/tomato/paprika
Olives
A few garlic cloves chopped
Dried herbs (and chili)
Salt and pepper Chili flakes or fresh chili
250g of pasta
Around 1dl of olive oil 1/2dl of the pasta water
Instructions
1. Chop the vegetables and the garlic into small pieces
2. Put the feta block in the middle of an oven dish and spread the vegetables and olives around it. Drizzle olive oil on top with dried herbs and fresh or dried chili (We used thyme, rosemary, oregano and basil)
3. Bake in the oven in 200°C around 30 minutes.
4. Cook the pasta meanwhile the feta-veggie mix is in the oven. (Save around 1/2 dl of the pasta water)
5. Once the feta-veggie mix is done baking, mix everything together with a fork. Then add in the pasta and pasta water and mix. Serve with some fresh basil and bread and enjoy.
